Origin
Located in the heart of Cerrado Mineiro, Fazenda Daterra is one of Brazil’s most awarded and respected farms.
A pioneer in agricultural research and sustainability, it was the first coffee farm in Brazil to achieve B Corp certification.
Its research plots are true open-air laboratories, where each variety is observed, measured, and selected with a balance of scientific precision and artisanal care.
Warm days and cool nights promote slow maturation, producing dense cherries rich in sugars and capable of developing a clean, complex aromatic structure.
Variety
Aramosa is one of the rarest and most fascinating varieties ever developed in Brazil.
Its name comes from the union of Arabica and Coffea racemosa, the African species known for its drought resistance and naturally low caffeine content.
This hybrid was created by the Instituto Agronômico de Campinas (IAC) as part of a research program aimed at producing a plant that maintained Arabica’s aromatic finesse while gaining resilience against heat, pests, and environmental stress.
The result is remarkable: a variety with naturally low caffeine levels (about 50% less than average) yet with exceptional sweetness and complexity.
Its genetic structure makes it ideal for experimental processes such as anaerobic fermentation, where its stable mucilage and dense pulp allow a deeper, more controlled aromatic development.
Aramosa stands as a symbol of Brazilian agricultural innovation — a bridge between science and sensitivity, efficiency and artistry, adaptation and expression.

Process
For this BV31 lot, Daterra applied a fully controlled anaerobic natural process.
The cherries were handpicked at peak ripeness and placed in sealed, oxygen-free tanks for approximately 72 hours.
During fermentation, yeasts and bacteria transformed the natural sugars into volatile aromatic compounds, enhancing the cup’s clarity and precision.
Drying followed slowly on raised beds, with constant temperature and humidity monitoring to preserve both the structure and sensory integrity of the beans.
The result is a luminous, balanced, and vibrant cup, where sweetness meets a rare brightness for a Brazilian coffee.
