Panama Hiu Los Lajones 21B is a coffee born in perfect balance between forest and volcano.
A natural Gesha that reflects the philosophy of Graciano Cruz , a pioneer of slow processes and absolute respect for the rhythm of nature.
Of all the hills of Volcán, Los Lajones is one of the highest and brightest: a 160-hectare finca where biodiversity and technology coexist without boundaries.

Origin

Finca Los Lajones extends between 1800 and 2000 meters on the slopes of Volcán Barú , in the district of Chiriquí.
It is a volcanic soil rich in minerals, crossed by regular rainfall and cold winds that slow the ripening of the cherries, favoring the development of complex sugars.

Approximately 120 hectares of the finca remain covered by primary forest, which protects the soil, regulates the microclimate and maintains natural biodiversity.
The alternation between rainy and dry seasons creates the ideal conditions for the long, stable fermentations that characterize Panama's best natural wines.

Collection and selection

Gesha cherries are hand-picked in several passes, exclusively at peak ripeness, with Brix levels monitored to ensure uniform sugar levels.
Once at the processing station, they are selected by density through flotation , then carefully sifted on sorting tables to eliminate any visual defects and obtain a homogeneous and clean batch before drying.

Process

The natural process of Los Lajones takes advantage of the cool climate of the highlands for a slow and controlled fermentation of whole cherries.
The drupes are spread out on raised beds in thin layers, turned several times a day to promote uniform drying and prevent unwanted fermentation.
Drying can last up to three weeks , allowing a gradual concentration of sugars and aromatic precursors inside the bean.
Once the moisture content reaches 11–12%, the coffee rests in parchment to stabilize its profile before grinding and export.

It is a slow, artisanal and precise process: a constant dialogue between man, time and climate.

In the cup

The result is a natural Gesha of great transparency and aromatic depth .
The first hints are of orange blossom and mandarin , followed by mango, peach and passion fruit .
The sweetness is long and layered, supported by bright tropical acidity and a floral finish with notes of jasmine and nectarine .

A clean, complex and persistent cup: a perfect balance between energy and grace.
