Origin
Finca Deborah sits nearly two thousand meters above sea level, deep within the cloud forests of Tierras Altas.
Here every plant is traced and every environmental parameter — light, humidity, airflow, fruit maturation — is monitored with meticulous precision.
The volcanic soil and humid microclimate give the cherries density, sweetness, and a complex aromatic structure.
Harvesting is done by hand, with selective picking: each cherry is chosen at the exact peak of ripeness, when color and texture reach perfect harmony between sweetness and acidity.
Variety
Gesha is the signature variety of Finca Deborah, descending directly from the original Gori Gesha lines, acclimated to Panama and refined through natural selection.
It’s a fragile, demanding, and slow growing plant, but one capable of unmatched depth and clarity.
Each tree is treated as an individual organism, capable of responding to light and climate with its own unique sensory expression.

Process
The Natural Carbonic Maceration used for Enigma is a balance between control and freedom.
Whole cherries are placed in sealed tanks, where fermentation occurs in the absence of oxygen for a precisely calibrated duration.
During this time, temperature, pH, and internal pressure are constantly monitored, allowing yeasts to develop fruity aromatics, bright acidity, and a silky texture.
After fermentation, the coffee is slow dried on raised beds in the shade, preserving the bean’s integrity and the purity of its flavor profile.
The result is a Gesha of exceptional definition, where strength and delicacy coexist in perfect harmony.
In the cup
It opens with purple grape and ripe cherry, followed by cocoa nib and fresh thyme.
As it cools, notes of red plum and pineapple emerge, adding vibrancy and tension.
