The Panama Janson GN 474 represents the purest vision of the Janson family, custodians of an agricultural heritage that for three generations has combined science, ethics and respect for the land.

Origin

Janson Family Farm is located between Volcán and Cerro Punta, in the heart of Panama’s highest and most pristine terroir.
The plants grow on nutrient-rich volcanic soil, in an ecosystem where forest and crops coexist in perfect balance.
Each batch is precisely monitored and digitally traced from plant to cup.

The Janson family practices minimal-impact farming, using natural composting systems, spring water, and managed reforestation.
It is an agricultural model that combines technology and tradition, to produce a coffee that speaks the language of the land from which it comes.

Variety

Janson Estate's Gesha is bred from original genetic lines from Gori Gesha, Ethiopia.
It is a plant that requires altitude, shade and patience, but repays with an extraordinary aromatic transparency .
Its delicate structure enhances the natural processes, where spontaneous fermentation and slow drying amplify its fruity and floral nuances.

Process

Coffee is harvested only at the peak of ripeness , when the color of the cherries reaches a uniform dark red hue.
After harvesting, the cherries are hand-selected and fermented naturally with constant temperature and humidity monitoring.
Days of slow drying on raised beds follow, until the perfect level of stability and sweetness is reached.
