In 2004 the Gesha from Hacienda La Esmeralda won Best of Panama and changed specialty coffee forever. Lino 7B is a washed lot: hand-picked cherries are sorted in spring water, fermented for about 24 hours, washed, soaked and slowly dried on raised beds. A process designed to let the variety speak.

Every Over Your Limits coffee is stored green, vacuum-sealed and frozen, the same technique used for competition coffees, and we roast it only when you order. The cold stops the green bean from ageing and protects its sugars, acidity and aromas, so every lot reaches your cup with the same profile as the day we first tasted it, even months after harvest.
