Las Lajas Micromill – Finca Carrizal was founded in the heart of the Central Valley, where altitude, stable climate, and volcanic soil create ideal conditions. Oscar and Francisca Chacón, third-generation producers, pioneered the introduction of high-quality Honey and Natural processes, transforming the Costa Rican coffee landscape.
A slow and controlled natural process
The Black Diamond Natural process begins with a rigorous selection of ripe cherries with a high Brix content. After an initial phase of aerobic fermentation in a thick layer, the cherries are spread out in a thin layer for a slow, controlled drying process (20–30 days), which crystallizes the mucilage sugars without thermal stress.
This process results in a sweet, clear and brilliant cup, with greater aromatic definition and complexity than other natural micromill coffees.

Las Lajas is more than a farm: it's a model of innovation and transparency, where each batch is traced and processed with artisanal care. Oscar and Francisca Chacón continue to experiment and train other local businesses, raising the standard of coffee in Costa Rica.
