Andrè used it during the selections of the Brewers competition , where he was able to enhance the complexity and aromatic richness of this Geisha through a meticulous extraction.
Natural Process – The Art of Traditional Processing
The natural processing method used for this batch emphasizes the sweetness and fruitiness of the coffee. After manual harvesting, the coffee cherries are dried whole, without removing the pulp, on traditional raised African beds under direct sunlight. This process, which lasts approximately 28 days , allows for controlled fermentation within the fruit, giving the coffee a complex structure and extraordinary aromatic depth.
