After harvesting, operators carefully select the cherries by hand.

Next, they immediately remove the pulp from the cherries, leaving the coffee bean covered in a layer of mucilage.

The coffee beans with their mucilage layer are then placed in anaerobic fermentation tanks and left to ferment for 96 hours.

During this time, the coffee develops notes such as pineapple and quince.

Afterwards, they dry the grains in the sun on African beds.

During this process, they regularly rotate the beans with their mucilage layer to ensure uniform drying.

After drying, they subject the coffee beans to a degreasing process to remove any mucilage residues still present.

Then, they clean them to remove any residual impurities.

Muhondo washing station is located in the northern part of Gakenke district, at an altitude of 1900 meters.

This area benefits from abundant rainfall, especially in the months from October to May.

This climate favors a slower growth of the coffees, allowing them to develop a particularly distinct aroma and body.

In addition to playing a significant role in creating local jobs, Muhondo is actively involved in the well-being of the people.

Growers receive support not only in terms of logistics for processing coffee, but also through supplies of seedlings, water supply systems and fertilizers.

They also provide them with valuable training on best farming practices and encourage them to apply for loans to improve and expand their farming operations.

These integrated efforts aim not only to improve the quality and sustainability of coffee production, but also to promote an overall improvement in living conditions and economic opportunities for residents of the region.
