San Rafael is born in the Cerrado Mineiro region, one of Brazil's most established areas for producing quality coffee. Here, at altitudes between 800 and 1,300 meters, the stable climate and clearly defined seasons allow for uniform ripening of the cherries, favoring rounded and structured profiles.
The Catuai and Mundo Novo varieties, historically rooted in Brazil, contribute to a solid and consistent cup, where sweetness and body are the protagonists. The combination of terroir and natural process creates a coffee with a strong chocolatey character, designed to offer balance and aromatic continuity.
Natural process: sweetness and structure
The traditional natural process involves drying whole cherries immediately after harvest. The cherries are spread out in the open air and left to dry slowly, allowing the sugars in the pulp to gradually transfer to the fruit.
During this stage, the fruit evolves progressively, developing riper notes and a more concentrated sweetness than washed coffees. Controlled drying preserves stability and uniformity, maintaining a clean and distinct structure.
