In the heart of Kenya’s central highlands, across the Nyeri and Othaya areas, the smallholders of the Mutheka and Othaya cooperatives cultivate historic varieties like SL28 and SL34 with care and traditional methods. The cool climate, high altitude, and volcanic soils rich in iron and phosphorus foster slow maturation and a rare aromatic complexity.
From these elements comes a coffee that surprises: decaffeinated, yes, but still able to express the full depth of its Kenyan origins. In the cup it opens with honey and chamomile sweetness, followed by enveloping notes of plum and dark chocolate. Blackcurrant and black tea bring structure and persistence, making each sip full, elegant, and complete.
The Swiss Water® method: naturally decaffeinated, without compromise
After being washed in Kenya, the coffee is sent to Canada for decaffeination with the Swiss Water® process: a natural method that uses no chemical solvents and preserves the bean’s original aromatic profile.
At the heart of the process is the Green Coffee Extract (GCE), a solution of pure water and soluble coffee compounds free of caffeine. Green beans are immersed in the GCE: through osmosis, caffeine begins to flow out naturally, without dragging aromatic molecules along with it.
The extracted caffeine is then removed through activated carbon filters. The solution, now once again caffeine-free, is reused for new cycles. This treatment lasts about 10 hours and removes 99.9% of the caffeine, while leaving the coffee’s identity untouched.
The result is a clean, authentic decaf with an aromatic profile that retains vibrancy and complexity: bright acidity, natural sweetness, silky body, and lasting persistence in the cup.
