A coffee that tells the story of the light of the Thai forest
In the mountainous heart of Chiang Mai, where the tropical forest meets small farming villages, the Hom Hoh Coffee project was born, a cooperative made up of 14 families led by Manop, a central figure in the local community.
On approximately 40 hectares of agroforestry, coffee grows alongside mango, banana, native trees, and wild plants. This biodiverse ecosystem allows the plants to develop naturally, contributing to a balanced and complex flavor profile.
The combination of altitude, natural shade, and traditional varieties creates the ideal conditions for a coffee that combines freshness, sweetness, and sensorial precision.
The honey process: sweetness and structure
In the honey process, the cherries are pulped immediately after harvesting, leaving some of the mucilage attached to the kernel during the drying phase.
This sugar layer slowly influences the drying process, allowing for the development of greater sweetness and a softer texture than washed coffees.
The beans are dried slowly on raised beds, with careful control of humidity and ventilation. This method allows for a clean aromatic profile while enhancing the roundness of the coffee.
The result is a cup that retains some of the freshness of the washed ones but with a fuller sweetness, a softer texture and a more velvety feel .
A community that cultivates quality and respect
Hom Hoh is much more than just a farming cooperative. It's a community project founded on sustainability, sharing, and enhancing the local area.
Manop and the families involved work according to regenerative agriculture principles, protecting the soil and local biodiversity. Agroforestry allows them to maintain a balance between agricultural production and environmental conservation.
This approach ensures not only quality coffee, but also economic stability and autonomy for the community's families.
Sweetness, structure and harmony

In the cup, notes of honey and caramel emerge, accompanied by nuances of yellow peach and mandarin . The sweetness recalls brown sugar , while the finish features a light spicy component that adds depth.
