Añas Blues originates from the Cajamarca region in northern Peru, one of the country's most renowned areas for producing quality coffee. Here, at altitudes between 1,400 and 1,800 meters, the temperate climate and slow ripening of the cherries favor the development of clean, sweet, and well-defined aromatic profiles.

The Catimor, Caturra, and Typica varieties contribute to a harmonious and coherent cup, where sweetness and brightness blend naturally. The combination of terroir and washed process creates a coffee with a balanced structure, designed to offer aromatic clarity and sensory continuity.

Washed process: transparency and definition

The traditional washed process involves pulping the cherries immediately after harvest, followed by controlled aerobic fermentation.

During this phase, the mucilage is carefully removed, enhancing the cleanliness and brilliance of the profile. The coffee is then washed, sorted by density, and left to dry slowly in the open air.

This method allows us to maintain balance and stability, highlighting the fruity component and natural sweetness without fermentation superstructures.

The result is a clean cup, with moderate acidity and a smooth, legible structure.

Citrus, yellow fruit and chocolatey sweetness

Notes of mandarin and honey emerge in the cup, followed by yellow plum, yellow peach, and ripe fruit. Light caramel accompanies the sip, while dark chocolate adds depth and a more structured finish.

The acidity is present but well-integrated, the body is medium and rounded, with a harmonious and balanced sensation. The sweetness is consistent and clean, with an elegant finish.
