Makhore coffee comes from the Jimma region, one of the most historically suitable areas of western Ethiopia. Here, at an altitude between 1,500 and 1,800 meters, the climatic conditions and local biodiversity favor the development of intense, complex, and well-structured aromatic profiles.
The heirloom varieties grown in the area represent the most authentic expression of Ethiopia's genetic heritage. The combination of terroir, altitude, and natural processing creates a coffee with a strong identity, capable of combining aromatic depth and natural sweetness.
Natural process: aromatic concentration and maturation
The traditional natural process used in Makhore involves drying the whole cherries immediately after harvest. The hand-selected cherries are spread out in the open air and dried slowly, allowing the sugars in the pulp to gradually transfer to the kernel.
During this phase, which occurs without removing the pulp, the fruit evolves progressively. Controlled drying allows for the concentration of sweetness and structure, developing darker, more mature notes than washed coffees. The result is a more rounded aromatic profile, with greater body and depth.
This method enhances the varietal characteristics of the heirloom, while maintaining a good balance between intensity and cleanliness.
