An exotic, floral Gesha from Jamison Savage's Finca Deborah: passion fruit, mango and jasmine.
In the cup
It opens with passion fruit and mango, then the strawberry arrives. As it cools, rose, jasmine and white tea come through, with a sweet vanilla finish. Bright, velvety structure; clean, lingering finish.
Finca Deborah sits at almost 2000 metres in Volcán, where Jamison Savage tracks every single plant and controls light, humidity and airflow. For Enigma, whole cherries ferment in sealed, oxygen-free tanks, with temperature, pH and pressure monitored constantly, then dry slowly in the shade on raised beds.
Competition-grade freshness
Every Over Your Limits coffee is stored green, vacuum-packed and frozen, the same technique used for competition coffees, and we only roast it once you order. The cold stops the green bean from ageing and protects its sugars, acidity and aromas, so every lot reaches your cup with the same profile it had the day we first tasted it, even months after harvest.
Why Over Your Limits
Because it's unpredictable: every sip shows you something new.
