The story
At Finca Deborah every micro-lot is monitored by sensors and cherries are hand-picked only between 21 and 24 Brix. In the Illumination Process the coffee is pulped with the mucilage left on, then ferments for about 100 hours in sealed tanks with filtered light and limited oxygen. Finally it is washed and slowly dried in the shade on raised beds.

Every Over Your Limits coffee is stored green, vacuum-sealed and frozen, the same technique used for competition coffees, and we roast it only when you order. The cold stops the green bean from ageing and protects its sugars, acidity and aromas, so every lot reaches your cup with the same profile as the day we first tasted it, even months after harvest.
