From the same farm as Los Lajones 21B, on the slopes of Volcán Barú. Graciano Cruz works without water: whole cherries are spread on raised beds and sun-dried for more than twenty days, turned several times a day and covered at night. A slow rhythm that builds a sweet, layered profile.
